The Roe

April is a special month for us. Every year we gather for roe milking on the bridge by the river. The rainbow trout is raked in and the roe milked out with a light pressure on the belly of the fish. After that, we let the fish go back into the water. The fresh roe grains look like firm, pinkish red pearls. The scent is pure and the taste mellow with integrated salt and mineral aftertaste.

All we need to add before scooping it into jars is a pinch of salt. You find the roe under the name Älvdalsrom and it comes in three sizes: 80, 250 and 500 grams. It is labelled with the seal Oðerwilldera and is available during a limited time in the spring. Frozen Älvdalsrom i available as long as supplies last.

The Fish

Our rainbow trouts grow up in clean, oxygen rich, streaming mountain water with a cool and even temperature. The farm consists of enclosures by the shore of the river Österdalälven. Here, the fish can find the necessary space and is fed to grow at a slow, natural pace. The streaming water keeps the fish in motion, which benefits the musculature and gives the flesh a rare, firm texture.

Most of the handling is by hand and always according to our strict Swedish regulations. Healthy fish have no need for antibiotics, and so far we have been able to avoid chemicals and medication in the production. This is how we always worked, and this is how we will continue working for the fine taste of healthy fish. Our fresh rainbow trout is available the year round.

The Fry

Excellent fish require excellent fry. Since the 80s we’ve been developing the breeding of Swedish rainbow trout. By consistently breeding only on the finest fish, the result is also a high quality roe. The plant is specifically fitted for reproduction and handling of roe, containing a hatchery and fry basins.

The eyed, that is fertilized, roe is passed on to other Swedish plants. We are very proud of our fry and how the small fish grow to be strong and healthy in the fresh waters of Sweden.

For roe milking, we use the same bench since 1985. The design was made by Mats Hjort, founder of Älvdalslax, and a local carpenter created it using wood from our own forest. A reliable milking bench.
